Crispy Bacon & Egg Cups

Ingredients

  • 12 slices streaky bacon
  • 6 large eggs
  • ½ cup grated cheddar cheese
  • 2 spring onions, finely chopped
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Method

  1. Preheat your air fryer to 180°C for 3 minutes.
  2. Place silicone muffin cups or an air-fryer-safe muffin tray into the basket.
  3. Line each cup with 2 slices of bacon, creating a bacon "shell".
  4. Air fry the bacon cups for 3–4 minutes to give them a head start on crisping.
  5. Remove the basket and sprinkle a little cheese into each cup.
  6. Crack one egg into each bacon cup.
  7. Season lightly with salt and pepper.
  8. Return the basket to the air fryer and cook for 7–8 minutes for a soft yolk or 9–10 minutes for a firmer yolk.
  9. Carefully remove the cups and allow them to cool for a minute before serving.
  10. Garnish with spring onions and parsley.

Serving Suggestion

Serve with avocado slices, roasted cherry tomatoes, or toasted sourdough for a quick and satisfying breakfast.
