Ingredients
- 12 slices streaky bacon
- 6 large eggs
- ½ cup grated cheddar cheese
- 2 spring onions, finely chopped
- Salt and black pepper to taste
- Fresh parsley for garnish
Method
- Preheat your air fryer to 180°C for 3 minutes.
- Place silicone muffin cups or an air-fryer-safe muffin tray into the basket.
- Line each cup with 2 slices of bacon, creating a bacon "shell".
- Air fry the bacon cups for 3–4 minutes to give them a head start on crisping.
- Remove the basket and sprinkle a little cheese into each cup.
- Crack one egg into each bacon cup.
- Season lightly with salt and pepper.
- Return the basket to the air fryer and cook for 7–8 minutes for a soft yolk or 9–10 minutes for a firmer yolk.
- Carefully remove the cups and allow them to cool for a minute before serving.
- Garnish with spring onions and parsley.
Serving Suggestion
Serve with avocado slices, roasted cherry tomatoes, or toasted sourdough for a quick and satisfying breakfast.
